Keynote Presentation: Howard Lyman

A fourth generation family farmer in Montana, Howard Lyman, in 1996, revealed on the Oprah Winfrey show how the cattle industry potentially exposed Americans to Mad Cow Disease. As a result of his remarks, Howard was named a co-defendant with Oprah in the "veggie libel" case brought by Texas ranchers. In his best-selling book, Mad Cowboy: Plain Truth from the Cattle Rancher Who Won't Eat Meat, Howard uncovered the dangerous and potentially deadly practices of the cattle and dairy industries. Join Howard for the current information on Mad Cow Disease in America and abroad.

Keynote Presentation: Dr. Lawrence Kushi

The Fall Health Classic proudly welcomes Dr. Lawrence Kushi, a nutritional epidemiologist who has been involved in a number of studies on the role of diet in cancer. He is the Principal Investigator of a large study recently funded by the National Cancer Institute that will examine the role of diet, use of alternative therapies, and other factors in breast cancer reccurence and survival. Dr. Kushi is also the son of Michio and Aveline Kushi, two of the leasing proponents of macrobiotics. His presentation will focus on the seemingly contradictory, but actually complementary nature of what we know about food, nutrition and cancer from these perspectives. Dr. Kushi will also consider the dietary guidelines from the American Cancer Society and other organizations which emphasize a plant-based diet, minimal animal food intake, and consumption of a wide variety of whole grains, fruits, and vegetables. He will present an overview with specific examples that underscore these recommendations.

Way of Life Studies with Cornellia Aihara

Led by senior teacher and author Cornellia Aihara, the 2004 Health Classic presents its very informative and successful "Way of Life Studies" program in macrobiotic and natural health studies for students desiring a beginning to intermediate level of study. "Way of Life Studies" courses are offered throughout the day and are marked with an * on the schedule. They include "On Being Healthier," "Introduction to Yin/Yang," "Visual Diagnosis," "Five Elements," "Macrobiotic Approach to Disease," "Introductory Macrobiotic Cooking," "Cooking for Health and Healing," and "Home Remedies." .

Keynote Presentation: Dr. Gordon Saxe

Physician and clinical researcher Dr. Gordon Saxe explores the roles of diet and lifestyle in the prevention and treatment of cancer from the lenses of both Eastern and Western medicine in his two-part keynote presentations, citing both his own and others' research and exploring the more holistic perspective of Oriental medicine. He will bridge Eastern and Western thought and practice by presenting a new, integrated philosophy of cancer as well as practical guidelines for its prevention and treatment. On Thursday Night, in his presentation "from Microbiology to Macrobiotics", Dr. Saxe will examine the nature of disease from the perspectives of both Western bioscience and macorbiotic holism, examining it's causes, energetic aspects, biological development, and practical approaches to healing. On Sunday morning, he will talk on "The East-West Cancer Connection" in which he will examine the role of dietary and lifestyle factors in the development of cancer and will present preliminary findings from a study now underway at the University of California San Diego School of Medecine on the role of a modified macrobiotic diet and relaxation training as a treatment for recurrent prostate cancer. Join Dr. Saxe for current information and research in the treatment and prevention of cancer.

Particular attention will be paid to the skin and the information it reveals. Helpful remedies, recipies and special drinks will be discussed. In Part II, "Belly and Breath," David will show how biography is reflected in biology. He will focus on self-diagnosis of the abdomen and breathing, two areas that are key to physical and emotional vitality

New Vistas...Advanced Workshop Series

"Proteins & Carbohydrates: Beyond the Media Hype" - David Briscoe

There is more to proteins and carbohydrates than the modern media view and the latest weight-loss crazes. David will explore proteins and carbohydrates from a big view that includes modern nutrition but goes beyond it as well. Learn how your use of proteins and carbohydrates can be a foundation for physical and emotional stability or how they can undermine them. Also, hear what macrobiotic counselors are starting to see in the health conditions of those on high-protein diets. Discover how carbohydrates are being totally misunderstood and falsely marketed. Come away with a solid ground on which to make your own choices.

"The Spiritual Quest " - Kaare Bursell

To paraphrase Bob Dylan, "People are crazy. Times are strange. I still care, but things have changed." Events are now taking place in the world which speak volumes for humanity to undertake radical changes in its way of perceiving and thinking about life and how to live it. At the same time, there is an enormous "wall of denial" being created to pretend that everything is normal and we can expect the future to play out much as it has done in the past. Kaare will explore the spiritual forces and impulses behind the "healthy instinct" toward a radical change in our thinking, feeling and acting, but will focus mainly on identifying the spiritual forces which are actively seeking to thwart and undermine the healthy spiritual evolution of humanity.
